Employed for the peak season to manage the F&B Team, while also over-seeing the Operations of the entire Activity Venue (Restaurant, Bar, Retail, Wave Activity, Events, and Entertainment). Worked very hands-on to lead the Teams, and help improve systems. Was also asked by the Owners to provide a report, to suggest ideas for improving operations at both of their venues
Provided funding to the project, then joined the Team to assist as a Consultant, offering ideas on how to increase profits/revenues, and improve service standards. Due to Staff shortages, assisted with management of Day-to-Day operations during High Season. Assisted in development of new drink menus, and with catering events. Joined the Team again in 2018 on a shorter term, high season Consulting Contract, while the Company explored and completed some expansion
General managed, and led hands-on, a Team of approximately 20 International Staff at one of the Group's busiest and most well-known venues. Also managed at 2 additional venues when required. Developed new Food and Cocktail menus, helped organize and run Events, trained Staff, improvised repairs to a number of damaged pieces of equipment, and helped improve service standards.
